Traeger Wood Fire Grill Recipe – Grilled Harvest Vegetables

Farm fresh veggies always taste better grilled. The perfect blend of harvest vegetables are grilled over oak, mixed with fresh herbs and topped with parmesan for a light and earthy dish.
Ingredients
- 6 ears corn on the cob, husked
- 2 green bell peppers, sliced
- 2 red bell peppers, sliced
- 2 orange bell peppers, sliced
- 1 lb green beans
- 1 lb cherry tomatoes
- 2 tbsp olive oil
- 1 tbsp kosher salt
- 2 cloves garlic, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp rosemary, chopped
- 1/8 cup parmesan cheese, shredded
Preparation
When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 375 degrees F and preheat, lid closed, for 10 to 15 minutes.
Grill corn on the cob for 10 minutes. Remove corn from grill and slice corn from cobb.
Combine all the ingredients except for the cherry tomatoes and parmesan cheese in an oven safe dish.
Place vegetables in grill and cook for 20 minutes. Add cherry tomatoes and parmesan cheese and cook for an additional 5 minutes.
Serve vegetables hot, enjoy!
