Traeger Recipe – Rabbit Tail Cocktail by Jim Meehan

Citrus, smoke and apple brandy come together in perfect harmony for the perfect fall cocktail. Wood-fired lemon wheels, the juice of lemon and orange get mixed with smoked simple syrup and stirred into apple brandy for a cold drink that’ll warm your insides.
Ingredients
- 2 OZ LAIRD’S APPLE BRANDY
- 0.75 OZ GRILLED LEMON JUICE
- 0.5 OZ ORANGE JUICE
- 0.5 OZ TRAEGER SMOKED SYRUP
Preparation
When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 350 degrees F and preheat, lid closed, for 10 to 15 minutes.
Place lemon halves directly on the grill grate and cook for 20-25 minutes or until grill marks appear. Remove from grill and let cool. Once cool enough to handle, juice the lemons then chill and reserve the juice.
Using the proportions listed above for a single serving, mix all the above ingredients in a large thermos and top with a bit of ice.
Serve in 6-8 oz glasses or cups and garnish each drink with a grilled apple slice. Enjoy!
