Brining: In food processing, brining is a process of treating food with brine, a mixture of water, salt, and sugar used to preserve or season the food. Brining can be applied to vegetables, cheeses, and fruit in a process known as pickling. Meat and fish are steeped in brine for shorter periods of time, as a form of marination, this process enhances its tenderness and flavor dramatically, it’s also used to enhance shelf time. Depending on chef’s desired effects, clear brine can be flavored with spices, vinegar, and any many other ingredients.

This drink’s a hole-in-one. Sweet tea, fresh squeezed lemon juice and smoked simple syrup come together to make one smokin’ refreshing drink.

Ingredients

  • 4 black tea bags
  • 3 cups boiling water
  • 6-8 medium lemons, juiced
  • 1 lemon, cut into wheel for garnish

Preparation

Put the tea bags in a heat-safe pitcher or bowl.

Bring 3 cups of water to a boil. Pour boiling water over tea bags. Let the tea steep for 5 minutes.

Remove the tea bags and set the tea aside to cool.

Juice the lemons. Add the lemon juice to the cooling tea.

Stir Trager Smoked Simple Syrup into lemon tea mixture. Put mixture in the refrigerator to cool completely.

Once cooled, serve in a glass over ice. Garnish with a lemon wheel. Enjoy!

Baked Cheddar Poblano Biscuits

Take your biscuit game to the next level with the spicy, cheesy and downright delicious biscuits. These homemade biscuits are mixed with cheddar, spiced with poblano peppers and baked over pecan.

Ingredients

  • 2 cups ALL-PURPOSE FLOUR
  • 1-1/2 tsp BAKING POWDER
  • 1/4 tsp BAKING SODA
  • 1 tsp SALT
  • 1 POBLANO PEPPER, DESEEDED & CHOPPED
  • 1 cup SHREDDED CHEDDAR CHEESE
  • 5 tbsp COLD UNSALTED BUTTER, CUT INTO 1 TBSP SECTIONS
  • 1 cup COLD BUTTERMILK
  • 1 EGG BEATEN WITH 1 TBSP WATER

Preparation

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 400 degrees F and preheat, lid closed, for 10 to 15 minutes.

Combine flour, baking powder, baking soda, salt, poblano peppers and the cheddar cheese in the bowl of a food processor. Pulse to combine.

Add the pieces of butter into the food processor and pulse until the butter is the size of peas.

Add buttermilk to the flour mixture and mix just until combined.

Dump the contents out onto a lightly floured surface and knead just until it comes together. Roll out the dough until it is 1″ thick.

Using a biscuit cutter, cut as many rounds as you can and place on a sheet tray lined with parchment paper. Combine the scraps, roll again, and cut again being careful not to overwork or warm the dough.

Brush the tops with the egg wash and sprinkle with a little bit of cheddar.

Place the sheet tray in the grill and cook for 15-20 minutes until the tops are browned and biscuits are cooked through. Enjoy!

Thanksgiving BBQ Turkey

Show your true BBQ colors and slather your bird with a little texas spicy this Thanksgiving. Brined, seasoned and glazed, this bird is BBQ through and through.

Ingredients

  • 1/2 Cup BUTTER, ROOM TEMPERATURE

Preparation

The day before you plan to cook the turkey, brine it according to the directions on the turkey brine kit.

The morning of, remove the turkey from the brine, rinse and pat dry. Combine the room temperature butter and 1/2 cup Texas Spicy BBQ sauce.

Using your hands, gently separate the skin from the breast and legs making sure to keep it attached and in one piece.

Slip the bbq butter mixture underneath the skin and spread in an even layer. Season the exterior of the turkey liberally with the turkey rub from the turkey brine kit.

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to High and preheat, lid closed, for 10 to 15 minutes.

Place the turkey directly on the grill grate and roast for 30 minutes then reduce the temperature on the grill to 300 degrees F.

Continue to cook for 3-4 hours or until the internal temperature reaches 160 degrees F in the breast (the finished temperature should be 165 degrees F but the temperature will continue to rise after the bird is removed from the grill).

In the last 20 minutes of cooking, glaze the bird with the remaining Texas Spicy BBQ sauce and cook until the glaze sets.

Let the bird rest 20-25 minutes before carving. Enjoy!

We’re bringing you a Traeger take on this beloved taco. It wouldn’t be wood-fired if we didn’t stuff these shells with pulled pork, brisket and wrap it all up with refried beans and a flour tortilla topped with cheese. Better make extra.

Ingredients

  • 10 soft shell tortillas
  • 10 crisp taco shells
  • 16 oz refried beans
  • 2 cups left over brisket
  • 2 cups left over pulled pork
  • 3 cups guacamole
  • 2 cups sour cream
  • 2 cups salsa
  • 1 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1 1/2 cups shredded cheddar cheese

Preparation

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 325 degrees F and preheat, lid closed, for 10 to 15 minutes.

Mix 1/2 cup of the sour cream with the refried beans. Place in an oven safe dish and put in preheated grill.

Wrap the left over brisket and pork in a double layer of aluminum foil and place in grill. Heat beans and meats for 25 minutes or until warm.

To assemble double decker tacos, spread a thin layer of the heated beans on a soft taco shell and wrap that on the outside of a crisp taco shell.

Fill the crisp taco shell with the brisket and pork, guacamole, salsa, onion, sour cream, onion, cilantro, and cheese to taste. Enjoy!

You won’t miss the buns with these sweet sliders. Ground bison is seasoned with curry and scallions and formed into patties, loaded onto a thick slice of grilled sweet potato and topped with red onion and arugula for a peppery bite.

Ingredients

Grilled Bison Sliders:

  • 1 SWEET POTATO, SLICED INTO 1/4″ ROUNDS
  • 1 Tbsp OLIVE OIL
  • SALT AND PEPPER, TO TASTE
  • 1 lb GROUND BISON
  • 1/2 Tbsp CURRY POWDER
  • 2 SCALLIONS, SLICED
  • RED ONION, SLICED
  • ARUGULA

Garlic Aioli:

  • 2 cloves GARLIC
  • 1 EGG YOLK
  • 2 TSP LEMON JUICE
  • 1/2 tsp DIJON
  • 1/4 cup CANOLA OR LIGHT OLIVE OIL
  • 4 Tbsp GARLIC
  • CHILI OIL

Preparation

To make garlic aioli: In a food processor, combine garlic cloves, egg yolk, lemon juice and Dijon mustard. Process until garlic is minced then begin adding the canola and chile oil very slowly one drip at a time until all of the oil is incorporated. Work slowly until emulsification is established then you can add the oil quicker making sure the aioli doesn’t get too warm or the emulsion will break.

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 350 degrees F and preheat, lid closed, for 10 to 15 minutes.

Season the sweet potato rounds with salt and pepper and toss with olive oil to ensure they’re fully coated. Place the sweet potato rounds directly on the grill grate and cook 20-25 minutes until slightly crisp and cooked through. Remove from grill and set aside.

In a medium bowl combine ground bison, curry powder, scallions and season with salt and pepper. Divide into 4 oz portions and press into patties. Place directly on the grill grate and cook for 7-10 minutes turning once.

To build the sliders, top a sweet potato round with a patty, aioli, sliced onion and arugula. Top with another sweet potato round if desired or leave open faced. Enjoy!

Want more beef in your life? Waygu smoked corned beef, sautéed in cast iron with peppers, potatoes, eggs and cheddar cheese. This corned beef hash makes for the perfect breakfast, lunch or dinner.

Ingredients

  • 1 to 2.5 lbs Wagyu Corned Beef Roast
  • 2 lbs cubed potatoes (also called southern hash brown or O’Brien potatoes)
  • 2 red bell peppers
  • 1 green pepper
  • 3 cups medium cheddar cheese
  • 7 eggs
  • 1/2 cup whole milk
  • 2 tbsp kosher salt
  • 2 tbsp black pepper

Preparation

Corned Beef: Corned beef needs to be cooked at least one day prior to making the hash.

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 275 degrees F and preheat, lid closed, for 10 minutes.

Rinse the corned beef and place on grill. Cook for 4 to 4.5 hours. Wrap in a double layer of heavy duty tin foil and put back on the grill.

Cook meat until it reaches an internal temperature of 204 degrees F. This should take 2-3 more hours. Let vent for 2 hours and place in fridge. Refrigerate overnight.

Corned Beef Hash: Chop and cook the peppers in cast iron for 20 minutes.

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 350 degrees F and preheat, lid closed, for 10 minutes.

Cut the corned beef into bite size pieces.

Combine the hash browns, corned beef, bell peppers, cheese, salt and pepper. Mix well and place in a 9×13 baking dish.

Mix eggs and milk in a separate bowl. Pour over the top of the hash brown mixture.

Cover with foil and set on the grill for a 1.5 hours. The internal temperature should reach 165 degrees F. Serve and enjoy!

Smoke your senses with this flavorful potato salad.

New potatoes are given our smoke treatment and roasted to golden brown, tossed with a spicy mayo and the perfect blend of fresh herbs.

Ingredients

  • 2 lb small new potatoes
  • 2 Tbsp olive oil
  • 1 Tbsp kosher salt
  • 1/2 tsp black pepper
  • 2 cups mayonnaise
  • 3-4 Tbsp Sriracha (adjust for desired spice level)
  • 1 Tbsp parsley and chives, chopped
Preparation

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes).

Toss potatoes with olive oil and season with salt and pepper. Place on a sheet pan and place the sheet pan directly on the grill grate and smoke for 15-20 minutes.

Remove from grill and adjust the temperature to High and preheat, lid closed, for 10 to 15 minutes.

Place the potatoes back on the grill and cook an additional 20-25 minutes or until tender. When they are cooked through, allow to cool.

While the potatoes are cooking, combine the mayonnaise and Sriracha. When potatoes are cool to the touch, toss potatoes with the Sriracha mayonnaise, parsley and chives. Enjoy!
