Thanksgiving BBQ Turkey

Show your true BBQ colors and slather your bird with a little texas spicy this Thanksgiving. Brined, seasoned and glazed, this bird is BBQ through and through.

Ingredients

  • 1/2 Cup BUTTER, ROOM TEMPERATURE

Preparation

The day before you plan to cook the turkey, brine it according to the directions on the turkey brine kit.

The morning of, remove the turkey from the brine, rinse and pat dry. Combine the room temperature butter and 1/2 cup Texas Spicy BBQ sauce.

Using your hands, gently separate the skin from the breast and legs making sure to keep it attached and in one piece.

Slip the bbq butter mixture underneath the skin and spread in an even layer. Season the exterior of the turkey liberally with the turkey rub from the turkey brine kit.

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to High and preheat, lid closed, for 10 to 15 minutes.

Place the turkey directly on the grill grate and roast for 30 minutes then reduce the temperature on the grill to 300 degrees F.

Continue to cook for 3-4 hours or until the internal temperature reaches 160 degrees F in the breast (the finished temperature should be 165 degrees F but the temperature will continue to rise after the bird is removed from the grill).

In the last 20 minutes of cooking, glaze the bird with the remaining Texas Spicy BBQ sauce and cook until the glaze sets.

Let the bird rest 20-25 minutes before carving. Enjoy!

We’ve got flavor the size of Texas. Thick-cut beef shoulder, jalapeño, poblano, and chipotle peppers are stirred into a tomato and beer-based chili and slow braised over hickory.

Ingredients

  • 4 lb beef shoulder or beef stew meat, chopped into 3/4” cubes
  • 2 bottles Stout Beer
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 2 small onions, diced
  • 1 small red onion, diced
  • 6 cloves garlic, minced
  • 2 jalapeños, seeded and diced
  • 1 poblano pepper, seeded and diced
  • 2 small cans chipotle peppers in adobo sauce, diced
  • 1 red bell pepper, diced
  • 1 green pepper, diced
  • 2 (15 oz) cans black beans, strained and rinsed
  • 2 (15 oz) cans kidney beans, strained and rinsed
  • 2 (28 oz) cans plum tomatoes with juices
  • 2 (28 oz) cans chopped tomatoes with juices
  • 2 (28 oz) cans crushed tomatoes
  • 2 tbsp tomato paste
  • 1/2 cup chili powder
  • 1/3 cup cumin
  • 1/4 cup dry oregano
  • 1 tbsp cinnamon
  • 1/2 bar of chocolate, optional
  • Salt and pepper, to taste

Preparation

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 325 degrees F and preheat, lid closed, for 10 to 15 minutes.

On the stove-top, pre-heat a dutch oven. Chop meat and generously season on all sides with salt and pepper.

Add olive oil to dutch oven and brown beef on all sides – working in two batches as not to crowd the pan.

After browning the meat, add beer to the dutch oven and cover until it comes to a boil.

In a separate pan on the stovetop, add olive oil, onion and garlic and sauté until slightly browned and translucent. Add peppers and cook for about 10 minutes or until they begin to soften.

Add the onions and peppers to the meat and beer mixture. Then add the beans, tomatoes, chipotle peppers and seasoning. Cover with lid and let come to a simmer.

Transfer the dutch over to the Traeger grill and cook at 325 degrees F uncovered, for 3 hours or until the beef is extremely tender.

Add tomato paste and stir. Adjust seasoning with salt and pepper if needed.

Optionally, finely chop the chocolate bar and add to the chili at the last minute, stirring thoroughly. Enjoy!

Cold-Smoked Salmon Gravlax

This dish is simple and simply delicious. Cold smoked salmon over apple wood served alongside fresh capers, cream cheese and a healthy dose of fresh dill.

Ingredients

  • 1 (2 lb) skin-on, sushi-grade salmon fillet, pin bones removed
  • 1 cup kosher salt
  • 1 cup sugar
  • 1 tbsp freshly ground black pepper
  • 2 Bunches dill

Preparation

In a bowl, stir together salt, sugar and black pepper until thoroughly combined.

On a work surface, turn salmon skin side up and sprinkle about half of salt mixture all over and rub in.

Arrange half the dill on the bottom of a baking dish large enough to hold the salmon. Set salmon skin side down on bed of dill.

Rub remaining salt mixture all over top and sides of salmon, then top with remaining dill. Cover with plastic, then top with a weight on a smaller baking dish or a plate with cans of beans on top.

Place in refrigerator and allow to cure for 2 days.

Remove salmon from refrigerator, rinse under cold water and pat dry with paper towels. Allow to sit at room temperature on the counter for 1 hour.

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set to Super Smoke mode if using a WiFIRE-enabled grill. Preheat, lid closed, for 5 minutes.

Place salmon onto a baking pan. Fill another baking pan with ice and place baking pan with salmon over ice. Place onto grill and smoke for 30 minutes.

Remove from grill and slice thin. Serve with cappers, red onion, dill, cream cheese and lemon. Enjoy!

Traeger BBQ Double Decker Taco

We’re bringing you a Traeger take on this beloved taco. It wouldn’t be wood-fired if we didn’t stuff these shells with pulled pork, brisket and wrap it all up with refried beans and a flour tortilla topped with cheese. Better make extra.

Ingredients

  • 10 soft shell tortillas
  • 10 crisp taco shells
  • 16 oz refried beans
  • 2 cups left over brisket
  • 2 cups left over pulled pork
  • 3 cups guacamole
  • 2 cups sour cream
  • 2 cups salsa
  • 1 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1 1/2 cups shredded cheddar cheese

Preparation

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 325 degrees F and preheat, lid closed, for 10 to 15 minutes.

Mix 1/2 cup of the sour cream with the refried beans. Place in an oven safe dish and put in preheated grill.

Wrap the left over brisket and pork in a double layer of aluminum foil and place in grill. Heat beans and meats for 25 minutes or until warm.

To assemble double decker tacos, spread a thin layer of the heated beans on a soft taco shell and wrap that on the outside of a crisp taco shell.

Fill the crisp taco shell with the brisket and pork, guacamole, salsa, onion, sour cream, onion, cilantro, and cheese to taste. Enjoy!

Want more beef in your life? Waygu smoked corned beef, sautéed in cast iron with peppers, potatoes, eggs and cheddar cheese. This corned beef hash makes for the perfect breakfast, lunch or dinner.

Ingredients

  • 1 to 2.5 lbs Wagyu Corned Beef Roast
  • 2 lbs cubed potatoes (also called southern hash brown or O’Brien potatoes)
  • 2 red bell peppers
  • 1 green pepper
  • 3 cups medium cheddar cheese
  • 7 eggs
  • 1/2 cup whole milk
  • 2 tbsp kosher salt
  • 2 tbsp black pepper

Preparation

Corned Beef: Corned beef needs to be cooked at least one day prior to making the hash.

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 275 degrees F and preheat, lid closed, for 10 minutes.

Rinse the corned beef and place on grill. Cook for 4 to 4.5 hours. Wrap in a double layer of heavy duty tin foil and put back on the grill.

Cook meat until it reaches an internal temperature of 204 degrees F. This should take 2-3 more hours. Let vent for 2 hours and place in fridge. Refrigerate overnight.

Corned Beef Hash: Chop and cook the peppers in cast iron for 20 minutes.

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 350 degrees F and preheat, lid closed, for 10 minutes.

Cut the corned beef into bite size pieces.

Combine the hash browns, corned beef, bell peppers, cheese, salt and pepper. Mix well and place in a 9×13 baking dish.

Mix eggs and milk in a separate bowl. Pour over the top of the hash brown mixture.

Cover with foil and set on the grill for a 1.5 hours. The internal temperature should reach 165 degrees F. Serve and enjoy!
