A few months back BBQ Concepts donated ten different Traeger grills to the Fire Stations of Henderson, Nevada, an outskirt of Las Vegas. This gesture was unprompted and without motive, other than cementing the underlying appreciation we have for our silent heroes. These heroes are rarely seen, talked about nor publicized. Their jobs, despite the inherent danger, seem mundane to us, all too common, subconsciously unworthy of the gratification that deservedly needs expression. Sometimes heroes don’t even recognize themselves as such any longer. When extraordinary becomes a standard, when death-defiance is no longer atypical, the mirror that reflects their image becomes distorted. But we see you, ladies and gentlemen. The heart you have for change and the guts you put on display as you never shy from adversity. The blood rushing through your veins, the adrenaline that you’re too engrossed to notice.

Before we iron out all the details during the consultation, it’s beneficial for both parties if the following series of questions are considered and determined prior to our engagement; be confident in how you wish to design your living space but open to the potential limitations we previously discussed. With that said, let’s get your checklist going.

Questions to Consider In Advance

1. Are functions with family and friends something you’ll entertain after having an Outdoor Kitchen?
2. Would you enjoy the luxury of running water, refrigeration or natural gas?
3. Do you have a water line/gas line running to your ideal landing zone for the kitchen? If not, have you inquired about an estimate?
4. Which fuel source do you prefer? Natural gas, charcoal, propane?
5. Will you be consuming the food outdoors as well? If so, have you considered your seating arrangement and if a built-in bar is right for you?
6. Will you predominately be smoking, grilling or baking your foods?
7. Which type of material finishes were you thinking of applying? Climate is a consideration. (More on this later)
8. Are functional storage and/or trash storage something you’re interested in incorporating?
9. What design layout/dimensions seem to be the most plausible for the space you’re designating? (More on this shortly)
10. What is your overall budget?
11. And finally, have you spoken with a design consultant yet?

These questions are necessary for us to move forward with the process and for you to feel like there’s no stone unturned. Without answering the aforementioned—and undoubtedly many more questions—you’ll forever be left wondering, “what if we went with gas instead?” or “you know, we really should’ve added a bar to our Outdoor Kitchen.”

Structural Layouts

Now that you know an undercounter refrigerator makes sense or that a built-in bar would decongest your home during gatherings, let’s talk about the shape of your Outdoor Kitchen. There are four main design choices, but we don’t have to adhere to them unwaveringly. The first is Linear and, as the word suggests, its straight, sleek and traditional. The second formation is L-shaped. Stylish in its diversity and simplicity, the user can create an imaginary partition to separate the food preparation from the kitchen’s inherent functionality. The Horse Shoe (or U-Shape) is third. Doubling the lateral counter space, it is dynamic and more multipurpose than the other options but may also minimize the center weight of the kitchen depending on your budget. Lastly is the Split Level. This design choice is tiered where there’s a bar top above the standard counter; it substantially increases the surface area for your workstation but is limiting due to its depth. If you have the appropriate space, it’s hard to go wrong.

Material Selection

Polymer, stainless steel, wood, granite, concrete, tile, and flagstone are a few of the choices you can select from during the overlaying of your Outdoor Kitchen. Weather plays a critical role in which materials should be used for year-round outdoor exposure, however. From ultraviolet rays to humidity and generally damp conditions, all can be kryptonite to varying exteriors. Baked Deep Dish Apple Pie

Apple pie like never before. This buttery spiced filling is loaded with apples, cranberries and citrus zest, topped with a homemade crust and baked in deep dish over pecan.

Ingredients

Crust:

  • 2-1/2 cups ALL-PURPOSE FLOUR
  • 1 tbsp SUGAR
  • 1 tsp SALT
  • 1 cup (2 sticks) BUTTER, cold
  • 6-7 tbsp ICE WATER
  • 1 EGG, beaten with a splash of cold water
  • 1 tbsp RAW SUGAR

Deep Dish Apple Pie:

  • 10 APPLES, PEELED, CORED AND SLICED
  • 1 Tbsp CINNAMON, GROUND
  • ZEST OF 1 ORANGE
  • ZEST OF 1 LEMON
  • 1 tsp FRESH GINGER, GRATED
  • 1/3 cup FLOUR
  • 1/3 cup BROWN SUGAR
  • Juice of 1/2 lemon
  • 2 tbsp BUTTER
  • 1/3 cup FRESH CRANBERRIES

Preparation

In the bowl of a food processor combine flour, sugar and salt. Pulse to combine.

With the machine running, drop in little pieces of cold butter until all butter is added and mixture resembles coarse corn meal. Add cold water 1 Tbsp at a time until dough comes together. You may not need all the water.

Turn dough out onto a floured surface and roll into 2 big rounds large enough to cover the pie dish with an over hang of at least 1” inch. Place into pie dish and prick the bottom with a fork.

When ready to cook, start the Traeger grill on smoke with the lid open until fire is established (4-5 minutes). Set the temperature to 350 degrees F and preheat, lid closed 10-15 minutes.

In a large bowl, combine sliced apples, cinnamon, ginger, orange zest, lemon juice, brown sugar, flour and butter. Toss to coat well and transfer to a baking sheet.

Place baking sheet in the grill and cook for 10-15 minutes, just until the apples release their juices.

Remove apples from the grill, combine with cranberries and place into the prepared pan reserving the juices.

Place the other pie dough on top of the apples, crimp the edges, cut slits into the top to vent, brush with egg wash and sprinkle with sugar.

Place directly on the grill grate and cook for 40 minutes or until the crust is golden brown. Let cool. Enjoy!

Thanksgiving BBQ Turkey

Show your true BBQ colors and slather your bird with a little texas spicy this Thanksgiving. Brined, seasoned and glazed, this bird is BBQ through and through.

Ingredients

  • 1/2 Cup BUTTER ROOM TEMPERATURE

Preparation

The day before you plan to cook the turkey brine it according to the directions on the turkey brine kit.

The morning of, remove the turkey from the brine, rinse and pat dry. Combine the room temperature butter and ½ cup Texas Spicy BBQ sauce. Using your hands gently separate the skin from the breast and legs making sure to keep it attached and in one piece.

Slip the bbq butter mixture underneath the skin and spread in an even layer. Season the exterior of the turkey liberally with the pork and poultry rub.

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to high and preheat, lid closed, for 10 to 15 minutes.

Place the turkey directly on the grill grate and cool for 30 minutes then reduce the temperature on the grill to 300 degrees F.

Continue to cook for 3-4 hours or until the internal temperature reaches 160 degrees F (the finished temperature should be 165 degrees but the temperature will continue to rise after the bird is removed from the grill).

In the last 20 minutes of cooking, glaze the bird with the remaining Texas Spicy BBQ Sauce and cook until the glaze sets.

Let the bird rest 20-25 minutes before carving. Enjoy!

Smoked Stuffed Avocado

Don’t let the size fool you, these avocados pack a wood-fired punch. Avocados smoked and stuffed with pulled pork, cheese, salsa, cilantro and topped with a perfectly cooked over-easy egg.

Ingredients

  • 6 avocados
  • 3 cups left over pulled pork
  • 1 1/2 cups Monterey jack cheese, shredded
  • 1 cup salsa
  • 8 quail eggs
  • 1/4 cup cilantro, chopped

Preparation

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 375 degrees F and preheat, lid closed, for 10 to 15 minutes.

Remove the pits from the avocados, removing some avocado from the center if needed.

In a bowl, mix together pork, cheese, salsa and cilantro. Place pork mixture on top of avocados and place in grill. Cook for 25 minutes.

Take a spoon and make a divot or “nest” for the quail egg. Carefully crack the quail egg into the “nest” and cook for an additional 5 to 8 minutes or until the egg reaches desired doneness.

Remove from grill and serve. Enjoy!

We’re bringing you a Traeger take on this beloved taco. It wouldn’t be wood-fired if we didn’t stuff these shells with pulled pork, brisket and wrap it all up with refried beans and a flour tortilla topped with cheese. Better make extra.

Ingredients

  • 10 soft shell tortillas
  • 10 crisp taco shells
  • 16 oz refried beans
  • 2 cups left over brisket
  • 2 cups left over pulled pork
  • 3 cups guacamole
  • 2 cups sour cream
  • 2 cups salsa
  • 1 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1 1/2 cups shredded cheddar cheese

Preparation

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 325 degrees F and preheat, lid closed, for 10 to 15 minutes.

Mix 1/2 cup of the sour cream with the refried beans. Place in an oven safe dish and put in preheated grill.

Wrap the left over brisket and pork in a double layer of aluminum foil and place in grill. Heat beans and meats for 25 minutes or until warm.

To assemble double decker tacos, spread a thin layer of the heated beans on a soft taco shell and wrap that on the outside of a crisp taco shell.

Fill the crisp taco shell with the brisket and pork, guacamole, salsa, onion, sour cream, onion, cilantro, and cheese to taste. Enjoy!
